What's the difference between tal, nummer and antal in Danish?

Tal is a number as a written or spoken numeral, nummer is a number that identifies something (a house number, or a telefonnummer), and antal is the count of items you have. English 'number' covers all three, so in Danish you pick according to the function.

When do I use mængde instead of antal?

Antal refers to a countable number of separate things, while mængde refers to an amount or quantity, typically of something you measure rather than count. If you could reasonably ask 'how many?', antal is usually the better fit.
